Couple of questions / suggestions..

Is there any way of enabling the hash tagging to work in user status updates and whats the time limit for hash tags to be recent and trending, would it be possible to have the trending tags to last a week for example, so we could have a trending this week in the forum block ?

Not currently no.

Whatever you configure in the block configuration

Yeah, you can configure the block that way by setting the time period to 1 week
