Let's say we have different categories to sell products (real case study)
For example (in courses category), you want them to provide a star rating for sound quality, a star rating for content, a rich text editor to let them write detailed feedback, pros, cons, a drop down menu to select 1 of the pre-defined options related to the course, another radio button option to select another feedback. and ...
Now, on the other category, you want to have a totally different review form for the product, because Software products are completely different from courses.
This only can be done using a full Custom Fields system for Reviews.
The best example ever done in an add-on, is in RMS by Bob. Here is a few screenshot of it:

and here is how pros and cons fields work:

- Courses
- Books
- Outlines
- Software
