Question Country not populating

I'm running into the error saying Ecommerce isn't finished being set up if I try to view the shop
It points me to needing to input the business address in the invoice options

However the address is filled in, the only thing I can't change is Country as it just gives the option of "None" and the drop-down show nothing but what is already selected (None)

I also off advice I found on another thread here, checked the address book section of the ACP, but that also has the same issue where it will not show a country, and that one does give an error that I can't save without it.

The readme guides don't really cover this, and I cant' find much else for help without posting beginner questions here like this, but so far, this has been frustrating as some areas of the add on work smoothly and other I feel like I'm slamming into a wall

I've found other things in the menu that says I need to "Add a country" but not where I should be adding them if there aren't auto-filled default ones.
